I don't know anyone who doesn't drink tea in the winter. After all it warms us up and helps many of those like me who suffer from low blood circulation and forever cold hands + feet. But what if I told you that you don't really have to buy Christmas flavored tea to feel the mood? You could easily flavor any tea yourself such as black tea or rooibos and even skip the sugar!
Below I introduce you my favorite flavoring syrup which you can quickly make at home! It's super easy and inexpensive. :)
It's also a pretty good gift. All you need to do is grab some nice jar along with ribbon and voila!

Christmas Tea Syrup

servings: 250ml

Ingredients:

250ml water
2 cups brown sugar
4 cinnamon sticks
5cm fresh ginger, sliced
10 cloves
1 anise star
1 orange peel

Instructions:

1. Add water, sugar, orange peel, ginger, anise star and cloves to a pot. 
2. Bring to boil until all sugar is dissolved. 
3. Turn off the heat and put aside from 30 to 60 minutes.
4. Strain out cinnamon, orange peel, ginger, cloves and anise star. 
5. Cool down and transfer to a jar. 
6. Store in a fridge up to one week.

The best hot chocolate EVER!

I'm going to be honest with you - I'm a hot chocolate addict. I don't just drink it, I really enjoy preparing it for my family. I've been working on the best hot chocolate recipe for many many years, I tested products of uncountable amount of hot chocolate producers and found one that I will probably stay loyal to. 
For me hot chocolate is not only about the powder. Milk is also an essential part of it after all! Therefore I spend a lot of time in preparing the spiced milk which creates the perfect base for our hot chocolate. You can use it not only for hot chocolate, but also for any lattes for the winter season!

The Best Hot Chocolate
(you will never drink other hot chocolate again!)

servings: 4

Ingredients:

4 cups milk
1 star anise
5 cinnamon sticks
5cm fresh ginger, sliced
10 cloves
0.5 tsp of ginger powder
0.5 tsp of nutmeg
1.5-2 tsp of gingerbread spice
1 tbsp of Whittard dreamtime hot chocolate
4 tbsp of Whittard 70% cocoa hot chocolate
(or 5 tbsp of your choice of hot chocolate powder)

Instructions:

1. Pour milk into a pot and add anise, cinnamon, ginger, cloves, ginger powder, nutmeg and gingerbread spice.
2. Heat the milk on higher heat for 2 min, while mixing.
3. Lower the heat to small and heat for 7-8 min. 
4. Pour the milk into another pot through strainer and continue heating for another 2 minutes on low heat.
5. While the milk is heating, take one ladle of it and pour it into a separate mug.
6. Add hot chocolate powder and mix until it melts and there is no lumps. 
7. Pour hot chocolate liquid into the warm milk and mix.
8. Using a ladle separate the liquid into 4 mugs and top with marshmallows.
9. Enjoy the best body warming hot chocolate you've ever drunk!

Winter comfort food: Cinnamon Buns


Cinnamon buns are my winter favorites. I usually bought them in IKEA in a frozen form but this year I decided to test some recipes and find the perfect one to make it at home! The recipe I prepared is a result of failures and wins (once I even mixed muscovado sugar with butter and ended up with all of it stuck to my fingers rather than the dough...ugh). You must try it this winter!

Cinnamon Buns  
servings: 12

Ingredients:

Dough:
7g instant yeast
1 cup warm milk
1/2 cup sugar
1/3 bar butter
1 tsp salt
2 eggs
4 cups flour

Filling:
2 cups brown sugar (I used muscovado)
6 tsp cinnamon
2/3 bar butter


Instructions:

1. Dissolve yeast in warm milk (NOT hot, just warm!). Leave for 5 minutes. 
2. In a large bowl mix sugar, butter, salt, eggs and flour. 
3. Pour in yeast with milk and mix well using the dough hook. Mine had small bits undissolved inside yet it was still ok at the end!
4. Oil a bowl and place the dough in it. Cover and let rise for 1 hour in a warm place. 
5. Preheat the oven to 180C. Grease the baking pan that you will use for buns.
6. Roll the dough so that its about 40cmx30cm.
7. Spread the butter on the dough. Then spread the sugar and at the end cinnamon. You can also mix sugar and cinnamon beforehand. DO NOT mix sugar with butter, as muscovado tends to melt very quickly! It will be almost impossible to spread it evenly later. 
8. Roll the dough starting from the long edge. Cut it into 12 pieces. 
9. Place the buns in the baking dish and cover with damp towel. Leave for 30 minutes to rise. 
10. Bake for 20 minutes and voila!

Butterbeer Recipe


Yes, I am a Potterhead. I was growing up with Harry Potter in my hand, next to my pillow and on the screen. First book my mom read me to sleep, next I read already by myself. Even now, when my childhood is a far memory, I still consider Harry Potter to be a big part of it and I believe it to be the reason behind my childhood being somehow magical and definitely worth remembering. 
This year I decided to give it a try and prepare the best ever butterbeer recipe. I prepared it twice before - once when I was in secondary school and once when I met my husband in 2011. First one was a success but the second one was a total fail!
This time it was a definite success! Butterbeer is describe in the books as "a little bit like less-sickly butterscotch" and I opt for this taste when preparing the drink. Below I present you the recipe for this delicious drink! 

Ingredients:
2 tbsp butter
1/4 cup brown sugar
1 tbsp maple syrup
1/2 tsp cinnamon
1/2 tsp ground ginger
1-2 cardamom seeds
1/4 tsp salt
1/8 tsp cayenne pepper
1/2 cup milk
3 cups water
2 tbsp toffee pudding mix
1/2 tsp vanilla extract

Preparation:

1. Melt butter with brown sugar and maple syrup in a large pot and boil for 1-2 minutes, until it darkens and starts bubbling. Remember to mix it from time to time so it doesn't burn.

2. Add spices, mix and slowly pour in milk. Mix again.
3. In a bowl, mix water with pudding mix and slowly add to the boiling mixture. 
4. Heat until the mixture is hot and almost bubbling and turn it off right before it starts boiling. 
5. Add vanilla extract, mix and pour into mugs. 
6. Serve hot!
